I recently was diagnosed with an egg allergy, plus sensitivities to about 20 other foods such as yeast, wheat, gluten, oats, milk etc).
I am trying to find some sort of "binder" for dredging food.
For instance, I would like to make coconut shrimp and marinated the shrimp in coconut milk but when I dredged it in the coconut flakes, they really didn't stick well.
Can egg replacer work as a binder?
Other suggestions of binders?
